INGREDIENTS (ONE BREAST PER DINER, 12 for a shift change meal).
· 4 boneless, skinless chicken breasts
· 1 box (6 oz) of stuffing mix (e.g., herb-flavored)
· 1 ¼ cups chicken broth
· 3 tablespoons unsalted butter, melted
· ½ teaspoon garlic powder
· ½ teaspoon onion powder
· ½ teaspoon paprika
· Salt and pepper, to taste
· 1 cup shredded mozzarella or cheddar cheese (optional)
· 2 tablespoons olive oil
· Fresh parsley, chopped (for garnish)
DIRECTIONS:
1. Preheat Oven: Preheat the oven to 375°F (190°C). Lightly grease a baking dish large enough to hold the chicken breasts.
2. Prepare Stuffing: In a medium saucepan, bring the chicken broth to a boil. Remove from heat, stir in the stuffing mix, and cover. Let sit for 5 minutes, then fluff with a fork. Add the melted butter and mix well. Set aside.
3. Prepare Chicken: Butterfly each chicken breast by slicing it horizontally but not all the way through, creating a pocket. Season both sides of the chicken with garlic powder, onion powder, paprika, salt, and pepper.
4. Stuff the Chicken: Spoon the prepared stuffing into each chicken breast pocket, dividing evenly. If using cheese, sprinkle a layer over the stuffing before closing the chicken. Secure the edges with toothpicks if necessary.
5. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the stuffed chicken breasts for 2–3 minutes per side, until golden brown.
6. Bake: Transfer the chicken breasts to the prepared baking dish. Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
7. Serve: Remove toothpicks, if used, and garnish with fresh parsley. Serve hot alongside your choice of side dishes.
TIPS:
· For added moisture, pour ½ cup of chicken broth or cream around the chicken before baking.
· Feel free to experiment with different stuffing ingredients, like chopped apples, pecans, or sautéed spinach, for unique variations.
·
Tell the watch to enjoy their deliciously stuffed chicken dinner!
