Socotra House Galley:Church Supper Hot Dish
The Afternoon Watch-Section Special

There was a time when every church basement in the Upper Midwest had a folding table groaning under the weight of casseroles. The Navy had much the same arrangement, except we called it the mess deck and steam tables, and the people arriving for supper had generally been working odd hours in uncomfortable places.
Today, Deirdre is bringing that tradition to the Socotra House Galley. With Kelly’s King Ranch Chicken Casserole already assigned to one end of the serving line, we’re adding an old-fashioned Church Supper Hot Dish for the outgoing watch, incoming relief and the day snakes who somehow manage to appear whenever the cheese starts bubbling.
No fancy ingredients. Just browned beef, tender potatoes, vegetables, mushroom soup and a golden crunchy topping. The kind of meal that could keep a squadron going through a cold Midwestern afternoon or a long line period at sea.

GALLEY RECIPE CARD
12–15 servings
Prep: 20 minutes · Bake: 30 minutes
Ingredients
2 lb ground beef
2 lb frozen diced potatoes or hash browns
1 large onion, chopped
2 cups frozen mixed vegetables
2 cans condensed cream of mushroom soup (10.5 oz each)
1 cup milk
2 cups shredded cheddar
1 large can crispy chow mein noodles (about 5 oz)
Salt, pepper and garlic powder
Four easy steps:
Brown: Heat oven to 350°F. Brown beef and onion in a large skillet. Drain excess fat and season.
Mix: Stir in potatoes, frozen vegetables, mushroom soup, milk and half the cheddar.
Bake: Spread into a greased deep 9×13-inch baking dish. Cover with foil and bake 25–30 minutes, until hot throughout and potatoes are tender.
Finish: Remove foil, scatter remaining cheddar and chow mein noodles on top. Bake uncovered another 5–10 minutes until bubbling and crisp. Ensure the center reaches 165°F.
For the day staff or visiting grandchildren, substitute Tater Tots, crushed potato chips or crispy hash browns for the chow mein noodles. If using frozen Tater Tots, allow additional baking time until they’re thoroughly heated and browned.

Closing the Mid-Week:
The beauty of a hot dish is that nobody has to explain it. The outgoing watch gets something substantial before heading home. The incoming watch gets a hot meal before taking over. And the day snakes, who have apparently been supervising the whole operation, get to decide whether Kelly’s Texas chicken or Deirdre’s Midwestern beef wins the afternoon.
Miles surveyed the two bubbling casseroles and declared the competition a draw.
Deirdre disagreed.
“Nobody,” she said with a grin, “Wins this one until the dishes come back empty.”
