Deirdre’s Sloppy Bun-Joes

OK- time for some truth. I only have seven recipes. That increases geometrically depending on the last couple steps- like down below in the directions when you get down to steps eight or nine. The President is at the G7 meeting in France thanking the European leanders for their crucial support in the recent Iranian crisis. Or something.
I have the feeling this is going to be lurching on for a while with a lot of strap-hangers in the conference room and i need to have snacks rolling out of the Galley to ensure things don’t get too rowdy in there. Sloppy Bun-Joes are what makes a quick, hearty meal perfect for hectic afternoon watch section turnovers. Or after the morning Production Meetings.
The first time I saw a recipe for something called “Sloppy Cups” was right after the Persians announced they would try “peace” for a change. That day, Between the bustle of visitors eager to get details on how they were going to start cheating our rumbling stomachs demanded attention. I reached for some ground beef, a staple we always have plenty of with my bulk beef buying strategy with the folks at Wyoming Pure Beef out in Wheatland, WYO. My usual method involves a nice heavy cast-iron skillet, generous dollop of olive oil, and in goes the beef and diced onions—a classic combination that sizzles its way to an unforgettable aroma.
The basic recipe is the one I call “red.” Colors are the way I start. Red evoked the idea of tomatoes, even if they have a fair amount of road ahead. With Red, you have the basics for both Mexican, American and Italian variations. This one started, generally, as a Sloppy Joe mixture, since a rummage through the fridge also produced a darkly inviting bottle of Worcestershire sauce, and I couldn’t resist a teaspoon to deepen the flavor profile.
Then, I whisked together ketchup and brown sugar into a sweet-tangy concoction that even the merchant-shipping section couldn’t resist! Forming the cups is the secret to this one, and it saves time and enables folks to eat with their fingers. I used the muffin tins from the back of the cupboard, and am going to order another couple so I can bake a bunch and get the prep time out of the way.
It worked like a charm. The cheese, a haphazard mix of mozzarella and cheddar, melted just right over the top, creates a comforting golden crust. Don’t rush pulling them out; a gentle lift will keep everything intact. These Sloppy Invisi-Cups were easy to handle, just what Holly and I needed to fill the dozen empty stomachs before the next feeding alarm.
If there’s any tip I cherished that day, it’s to never underestimate the power of a quick bake in the oven—those minutes are just enough to allow conversations to pause, ship profiles to be moved on the big sliding wall map, and a whiff of cheese to fill the air, giving everyone a tiny bit of comfort in the chaos that is life in crisis times. For shift changes with two or more sections at the table, double the ingredients to serve up to a dozen watch- standers.

Ingredients
1. ;’Wildly Virgin Brand Olive oil (to taste)
2. 1 pound lean ground beef
3. 1 cup yellow onion diced
4. 1 cup ketchup
5. 1 teaspoon Worcestershire sauce
6. 1/4 cup light brown sugar
7. 2 teaspoons onion powder
8. 8 hamburger buns
9. 1/2 cup mozzarella and cheddar cheese- shredded,
Directions
1. Preheat the oven to 425 degrees F.
2. Add olive oil to a frying pan, then add the ground beef and sauté until the meat is no longer pink, about 5-7 minutes. While the beef cooks, add the diced onions to the same pan. Drain the excess grease.
3. Pour the ketchup, the Worcestershire sauce, the brown sugar, and the onion powder into a medium mixing bowl. Stir well.
4. Add the ketchup mixture to the pan with the ground beef and stir until all of the meat is coated in the sauce.
5. Separate top and bottom buns and place the hamburger in muffin tins, pressing them down gently to form cups.
6. Spoon the ground beef mixture into the cups.
7. Sprinkle the cheese on top of the ground beef mixture.
8. Bake the cups until the cheese is completely melted, about 6-8 minutes.
9. Transfer the muffin tins from the oven and carefully lift the Sloppy Cups out of the pan.
10. Serve the watch standers!
