Dierdre’s Fried Farmer Cheese Dumplings


Dierdre burst into the Conference Room with a declarative announcement that seemed to bounce inward from the swirling gray outside the wide glass windows. “Y0!“ she said, pointing to Holly, who was leaning in from the Galley door with three brown grocery bags. Each was heaped tall with colorful boxes and containers.

“I have a comforting and traditional dish that combines the creamy, slightly tangy flavor of Farmer Cheese with soft, pillowy dumplings which I then swirl in the big cast iron pan with extra virgin olive oil to bring a crispy light brown finish to the dumplings. They are dynamite.”

The girls had big grins. “You guys are going to love them!” said Dee. “These dumplings are versatile and can be served as a main course, side dish, or even a dessert depending on how they are prepared and what we choose to pair them with. The dough is simple to make and the Farmer Cheese adds a delightful richness that pairs well with savory sauces, sweet fruit fillings, or simply melted butter and herbs. That is what we are going to have for breakfast this morning.”

Holly moved into the Galley and placed the grocery sacks on the green island in the middle of the room. Creative Section Leader Miles watched as ingredients came out of the bags to be stacked next to the rugged two-burner tactical cooking element on the counter next to the sink. “We are forced into some creativity,” she said, looking up at Miles. “We are attempting to bring field cooking into fine office cuisine suitable for keeping the creative process floating along in office environments.”

Miles glanced over at the little group of Old Salts who were looking with interest at the group with one older and two younger figures standing next to the tall stainless refrigerator. “So, what is breakfast going to look like?” asked Splash, rubbing his hands in anticipation.

Holly held up her phone which displayed a bright image of dumplings crafted with creamy cheese, dappled with herbs on a light gold crusty surface. “Whether you’re looking to explore Eastern European cuisine or just want a cozy, homemade meal, Fried Farmer Cheese Dumplings are a delicious choice. Deep fried or lightly browned, these are the way to start the day!” She raised her tablet and held it out with the text shining bright:

INGREDIENTS:
· 1 cup farmer cheese (or ricotta cheese, if unavailable)
· 1 large egg
· 1/2 teaspoon salt
· 1 cup all-purpose flour (plus more for dusting)
· 2 tablespoons extra virgin olive oil for browning and 2 tablespoonse melted butter (for serving)
· Fresh herbs, sour cream, or fruit jelly for garnish (optional)

INSTRUCTIONS:
1. Prepare the dough: In a large mixing bowl, combine the farmer cheese, egg, and salt. Stir until well mixed. Gradually add the flour, mixing until a soft dough forms. The dough should be slightly sticky but manageable. If the dough is too sticky, add a little more flour.
2. Shape the dumplings: Lightly flour your hands and work surface. Divide the dough into small portions and roll each portion into a ball, about the size of a walnut. If you prefer, you can flatten the balls slightly to form more of a disc shape.
3. Cook the dumplings: Bring a large pot of salted water to a boil. Reduce the heat to a gentle simmer and carefully drop the dumplings into the water, working in batches if necessary. Cook the dumplings for about 5-7 minutes, or until they float to the surface and are cooked through. Remove the dumplings with a slotted spoon and drain well.
4. Serve: Transfer the cooked dumplings to the large cast iron skillet with olive oil brought to medium-high heat for browning, approximately 4-5 minutes till golden. Place dumplings In a serving dish and drizzle with melted butter. For a savory option, garnish with fresh herbs like dill or parsley and serve with sour cream. For a sweet version, sprinkle with sugar and cinnamon or serve with fruit jelly topping.

Holly propped her tablet next to the microwave as the Production Meeting got off in the Conference Room, punctuated by muffled crashes from the cutlery in the Galley. Dierdre was demonstrating the dumpling rolling technique. “Farmer Cheese Dumplings are a versatile and comforting dish,” she said, “And they can be enjoyed in a variety of recipes. Their soft, creamy texture and rich flavor make them a delightful treat for breakfast or as a toping layer over chicken soup for lunch or in a layer over Roket’s Chili Rampage for dinner as a main course, or on the side, or as a sweet dessert.”
The Production Meeting decided to do an installment of Dierdre’s cook-book, since the immediate business of the day was almost done. And the sound of the spatula in the skillet meant we were more than halfway to lunch!
