If things are busy, there might be seven or eight people coming and going, plus another four or five from the Day Staff who suddenly begin looking hungry when they smell something cooking in the late afternoon before things settle down to some dozers over night.<\/p>\n<p>Funny how that happens.<\/p>\n<p>Breakfast might be juice, donuts, pierogi, fritters and Black Rifle Coffee.<\/p>\n<p>Lunch might be soup, sandwiches or something left over from yesterday that improves- or at least solidifies after a night in the refrigerator.<\/p>\n<p>Late afternoon is different and lively.<\/p>\n<p>That is when you want something hot on a platter in the middle of the Conference Table while people are finishing whatever they were supposed to finish before Happy Hour.<\/p>\n<p>But before we could do any of that, I had to build the place.<br \/>\nYesterday, I showed you what I was able to justify to Finance and eventually get installed in the old maintenance space off the Conference Room.<\/p>\n<p>There is also a central kitchen in the building on the 6th Floor that we can use when necessary. That is where the fritter and buffet carts earn their keep by being mobile: load the tubs or the platter counter, roll the contraptions onto the elevatorz and deliver cheerful sustenance wherever the crowd happens to be.<\/p>\n<p>So, mobile was essential since the Galley proof itself started slowly.<br \/>\nThere was a little icebox for the old coffee service that I had ripped out so we could install a decent refrigerator. That was the first substantial expense.<\/p>\n<p>I wasn&#8217;t going to try to jam a conventional stove into the room.<\/p>\n<p>Instead, I found a good countertop induction burner that gave me a place for a frypan or kettle with jacks on the mobile cart.<\/p>\n<p>Then I bought another mobile device that could serve as a separate rolling cooking element.<\/p>\n<p>That is how these things happen on the move.<\/p>\n<p>An eight-quart slow cooker on the counter followed. Then another, with one normally held in reserve in the rack above the deep sink. Then the big air fryer. Microwave on the wall. Soup kettles. Lodge frypan. Knives, spices and stainless tools.<\/p>\n<p>I won&#8217;t bother you with brands. I mostly went online, searched for \u201cbest whatever,\u201d compared the results and tried to explain to Finance why Socotra House could not possibly continue functioning without one.<\/p>\n<p>Easy peasy.<\/p>\n<p>What you are looking at above is the Galley at maturity, after a full Summer of Celebrations.<\/p>\n<p>Two eight-quart slow cookers. Two induction cooktops with eight-inch heating elements. The big air fryer. Microwave on the wall. Two freezers down in the company parking places in the garage.
