It&#8217;s Dierdre and I have had this recipe waiting to run since things seem to have started a new 57-day Groundhog Day in the vicinity of Great Socotra Island in the North Arabian Sea. In order to have something warm and comfy on rainy grey days like this I like to mix up a big batch of Pretzel Rolls. For an afternoon filled with moving images of people in fierce activity, they are a deliciously soft and chewy treat. I do mine with the signature golden-brown crust and slightly salty flavor of a traditional pretzel.<\/p>\n<p>I make them by shaping the traditional dough into round buns, boiling them briefly in a baking soda solution to seal them up, and then baking them until perfectly golden.<\/p>\n<p>Small or large, they\u2019re ideal for sandwiches, burgers, or simply enjoyed on their own with a bit of butter. The process is straightforward, and the result is a flavorful, homemade roll with a wonderful soft pretzel-like texture.<br \/>\nINGREDIENTS (THIS IS SMALL BATCH. FOR SHIFT-CHANGES AND MORE THAN A DOZEN IN THE CONFERENCE ROOM JUST DOUBLE OR TRIPLE THE INGREDIENTS. THEY ARE GOOD FOR THREE DAYS IF THE TRAY DOESN\u2019T GET EMPTIED first. Make plenty of dip and this goes well with hard and soft drinks:<\/p>\n<p>\u00b7 1 1\/2 cups warm water<\/p>\n<p>\u00b7 2 1\/4 teaspoons active dry yeast<\/p>\n<p>\u00b7 1 tablespoon sugar<\/p>\n<p>\u00b7 4 cups all-purpose flour<\/p>\n<p>\u00b7 1 teaspoon salt<\/p>\n<p>\u00b7 1\/4 cup unsalted butter, melted<\/p>\n<p>\u00b7 2\/3 cup baking soda<\/p>\n<p>\u00b7 10 cups water<\/p>\n<p>\u00b7 Coarse salt for sprinkling<\/p>\n<p>INSTRUCTIONS: THIS IS THE FUN PART. I LIKE THE STAGING OF THIS, SINCE WE GET THE FLOUR AND STUFF ALL OVER. MAKING THE DOUGH JUST STARTS IT. SO, GRAB YOUR BOWL AND GO OVER TO THE COUNTER AND\u2026.<\/p>\n<p>1. Make the Dough:<\/p>\n<p>o In a bowl, dissolve the yeast and sugar in warm water. Let it sit until foamy. In a large bowl, mix the flour, salt, and melted butter. Add the yeast mixture and knead until smooth. Let the dough rise for 1 hour. The rising time is crucial to success. I ave best results in doing this along with sandwiches or soup and let things rise to the occasion.<br \/>\n2. Shape the Rolls:<\/p>\n<p>o Divide the dough into 8-10 pieces and shape each into a round ball. Let them rise for an additional 15 minutes.<\/p>\n<p>3. Boil the Rolls:<\/p>\n<p>o This is a key step in making magic. Preheat your oven to 425\u00b0F (220\u00b0C). In a large pot, bring 10 cups of water to a boil and add the baking soda. Boil each roll for 30 seconds on each side.<\/p>\n<p>4. Bake:<\/p>\n<p>o Place the boiled rolls on a baking sheet, sprinkle with coarse salt, and bake for 15-20 minutes until golden brown.<\/p>\n<p>Enjoy these Pretzel Rolls as a tasty, homemade treat that\u2019s perfect for any crisis or slow news days. They pair beautifully with rich, savory dips placed in the skillet or in tubs on the table. Good recipes include ranch dip from the fridge or some of the beer cheese and the Turok Bacon-ceddar dip or tangy sweet-and-spicy mustards.
